Blackline Pork

Black Line Pork is a new type of pork (Kurobuta) which has been improved in its softness, juiciness and richness of flavor. Sunterra Farms in Canada breeds and raises Black Line hogs with barley grain of fine quality, without using growth hormone or antibacterial formulations. This is a high-quality pork that is absent in animal odor and will please all taste buds.

Berkshire

For over 300 years, the Berkshire hogs have been acknowledged as producing supreme quality gourmet pork.Know as “Kurobuta” or “black pig” in Japan. the exceptional taste of Berkshire pork is as prized as Kobe beef. Canadian famers crossbreed three different hogs and have successfully raised “Kurobuta Berkshire” in this country, now recognized as THE WORLD’S BEST PORK. Its intramuscular marbling where all the natural flavor and juiciness reside, will definitely impress you. In addition, well-balanced high-quality barley grain are selected for feeding. Absolutely no growth hormone or antibacterial formulations are used.

Sauce

At the beginning of “Ginza Bairin”, founder Mr. Nobukatsu Shibuya was not satisfied with the existing sauce (worcestershire sauce or demi glace sauce),  and so he looked for a completely new sauce with the thickness suitable for a pork cutlet.He formulated and developed “Bairin Special Katsu Sauce (thickened worcestershire sauce)” using this experience of being a pharmacist. It has the sweetness from various kinds of fruits and vegetables, such as apples, and onions that makes its a one-of-a-kind sauce.

Sauce – Tare

The original cutlet bowl was created by the Sancho-an (long-established soba noodle shop). However, Mr Nobukatsu Shibuya was not satisfied with the sauce used for this cutlet bowl either. The original sauce was made from ocean bonito base soup stock, but he believed soup sock made from pork would be the best match for pork dishes. He made the soup stock from the “Pork muscles”, which come out when cleaning pork meat, and onions. Along with this pork-based soup broth, we have added sweet cooking rice wine, enriched soy sauce and San-on-sugar, a mild “soft brown sugar” used for Japanese sweets, to enrich our special sauce for KATSUDON.  

Flying oil

Working together with a cooking oil company, we developed our own oil for our Tonkatsu. This special oil is difficult to oxidize and can fry our cutlet crispy and juicy, which was widely appreciated by both younger and older generations.

Breadcrumbs

We use our original raw breadcrumbs with low sugar content in order to not spoil the taste of the pork meat itself. After long and hard study, we developed our special breadcrumbs which gives you crispy textures and distinctive tastes.

Egg

We use “Waimana TKG” eggs which are produced by OK poultry LLC located in Waimanalo on the east side of Oahu. Feeding high quality feed and water o the chickens under Japanese egg farming technology produces reliable and safe eggs that can be eaten row. Enjoy fresh and tasty eggs of the same quality as the ones produced in Japan.

Cabbage

The Hawaiian cabbage’s fragrances and flavors are attained by washing, shredding and blending the roots and leaves of the cabbages. Even through the water here in Hawaiian originates mostly from natural springs or underground river beds, which makes it vert clean, we wash the cabbage through our own filtered water. Lastly, the cabbage maintains its flavor and crispness because we keep it chilled in ice cold water until served.

Rice

The best-known rice brand Tsuyahime is produced in Yamagata prefecture. The Tsuyahime has been receiving the highest grade of “Special A” for 6 years in a row compiled by the Japan Grain Inspection Association since its debut in 2020. This brand of rice, raised only by select approved farmers and used in top-class restaurants, its truly fit to represent Japan. Shiny, sticky, sweet and bigger grains, it tastes delicious even after it cools down. In various blind taste tests, it has been found to have the perfect sweetness, texture, umami and fragrance. Tsuyahime uses about 5 times less pesticides than regular rice.
